Edit: I got it working and here's how.

As part of my upgrade to a blackberry, I needed a new SIM as my previous SIM was too old and ghetto to work in the 8120. I put the new SIM in my old Ericsson mobile and did a fully factory reset. I then went to configure.telstra.com and sent down the GPRS profiles for MMS and Internet to the phone. I confirmed that MMS and GPRS worked successfully on the Ericsson and then switched it off.

I put the SIM into the Blackberry 8120 and voila! It works! MMS and GPRS settings appear to be stored in the SIM which must be a newish feature of the SIMs compared to the poor old 1998 SIM I still had.

So there's the answer, got problems with MMS and GPRS? Plonk your SIM into a blank phone, send the over-the-air configuration and off you go.

LogicMail, Gmail, Google Maps, Opera, all work over GPRS and wi-fi now.

I feel strangely complete.
whaaaaaaaa!!! Still not having any joy. Put my Telstra SIM into a Palm Treo, could browse the net on that device, everything appeared well. Back in the Blackberry, back to the drawing board. I'm not sure of anyone that has a Blackberry on Telstra, but will hunt one down. Hopefully that may work. Slowly but surely knocking off these fixes. One by one.
